My little boy often wakes up much before I would like to be woken up and sometimes, figuring out what to make for a baby led weaning breakfast quickly can be a real challenge. This 3 ingredient recipe for breakfast that can be prepared ahead of time was a life saver!

 

It has 3 simple ingredients: eggs, sausage and sweet potatoes. It also can be made in a batch in under 20 minutes with enough breakfasts for a week!

Nurture Life’s easy finger foods meal plan has a really simple eggs breakfast dish, but the price point is $5.99 per container. I love how easy Nurture Life’s meals are, but this recipe is also extremely simple to make so this meal was not something I would consider getting shipped to my door.

Quick baby breakfasts for a week!

I was able to spend under $5.99 to create 7 meals! It only took about 20 minutes to make them too. It took about 5 minutes to steam the sweet potatoes, the sausages were precooked, the scrambled eggs took about 5 minutes and then I just needed to assemble the freezer containers.

The only change in my recipe from the original is that I opted for chicken sausage rather than pork sausage. I chose a sausage that had apples in it to incorporate a little fruit and sweetness into the dish.

 

For a fraction of the price, I thought this was an easy copycat recipe for baby led weaning breakfast!

How to 

I purchased sweet potato cubes, eggs and Aidells chicken apple sausages. The ingredients were about $12, but as I mentioned earlier, I have two additional recipes that are baby led weaning friendly you can make to stretch these ingredients. I only used $5.88 of the ingredients for this dish.


  1. Pierce the sweet potato bag several times with a fork, following the instructions on the bag, and microwave them. If fresh sweet potatoes are unavailable, frozen ones are a suitable alternative. Both options are more convenient than attempting to cut raw sweet potatoes, which can be challenging.
  2. While the sweet potatoes are cooking, crack four eggs into a bowl and beat them with a fork to scramble. Adding milk is optional; I chose to omit it for firmer pieces.
  3. Heat a pan on medium to medium-high heat, then transfer the beaten eggs into the pan. I opted not to stir the eggs excessively during cooking to control the size of the resulting egg pieces. Cooking time is approximately 5 minutes, depending on your stove and pan.
  4. Retrieve the microwaved sweet potatoes, place them in a bowl, and transfer the scrambled eggs to another bowl. Place both bowls in the fridge for a few minutes to cool.
  5. As the eggs and potatoes cool, slice two sausages into bite-sized pieces, approximately 1/2 inch thick, then cut each slice into four pieces.
  6. Once everything is prepared, assemble the containers using freezer-friendly options. Start with a layer of sausage at the bottom, followed by sweet potatoes and then eggs.

 

I prepared seven baby-led weaning meals with a focus on incorporating more sausage and sweet potato than eggs, as my little one is still adjusting to scrambled eggs. Adjust the egg quantity if you prefer a more egg-centric meal. This baby-led weaning breakfast is effortlessly simple to make!

I was able to fill 7 containers in 20 minutes for less than the cost of 1 container of Nurture Life! That’s over a $5 savings per container compared to Nurture Life!

Ingredients
  

  • 2/3 16 oz bag Sweet Potato Cubes Steamable in Bag is Easiest
  • 4 Eggs I opted for cage free.
  • 2 Sausages I opted for natural chicken & apple sausages.

Instructions
 

  • Stab the bag of sweet potatoes with a fork a few times and throw them in the microwave per the instructions on the bag.
  • While the potatoes are cooking, break 4 eggs into a bowl and beat them with a fork to scramble them. You can opt to add milk here.
  • Put a pan on medium to medium high heat and put your eggs in the pan. If you want to control the size of the pieces, don't move the eggs around a ton until the end of the cook.
  • Remove the sweet potatoes from the microwave and place in a bowl and place the eggs in another bowl. Place both in the fridge for a few minutes to cool.
  • While the eggs and potatoes cool, cut up two sausages into bite sized pieces.
  • Once everything is cut, assemble the containers using whatever containers you have that are freezer friendly. Place sausage on the bottom then sweet potatoes and then the eggs.
