Baby Led Weaning – Turkey Veggie Meatballs, Scrambled Eggs & Sweet Potato breakfast

On work days, I love being able to grab a quick healthy meal out of the freezer for my baby to eat for breakfast. Since I’m not a big breakfast person, it’s hard on early mornings to make up a baby led weaning friendly breakfast.

 

When I bring the little man to caregivers too, it’s so easy to just grab breakfast for him quickly then I just add some fruit and Greek yogurt on the side.

 

After researching some breakfast plates online, I thought I would create some healthy hidden veggie meatballs to go with some easy scrambled eggs and already diced sweet potatoes.

Turkey Veggie Meatballs, Scrambled Eggs & Sweet Potato

Ingredients

  • 1 bag of sweet potato cubes (I couldn’t find organic ones)
  • 6 large eggs (I chose cage free)
  • A handful of baby carrots
  • A handful of Spinach
  • 1 lb Ground Turkey (I chose a seasoned one)
  • A splash of milk (if desired for the scrambled eggs)

How to 

I purchased frozen sweet potato cubes, eggs, ground turkey, spinach & baby carrots. The ingredients were about $15, but a lot of recipes on my blog use similar recipes so I was able to use the leftovers on other dishes or for salads for us for dinner. 


  1. Preheat oven to 350.
  2. In a small food processor (I have a Ninja Express Chop $20), put a few carrots and some spinach in it and pulse until diced finely.
  3. Put the ground turkey in a bowl and add the veggies. Mix until well blended.
  4. Mold the mixture into small balls. I did about the size of ping pong balls. Place in oven for about 20 minutes or until the internal temperature is over 165.
  5. While the meatballs are cooking, stab the bag of sweet potatoes with a fork a few times and throw them in the microwave per the instructions on the bag. You can use the frozen ones too if you cannot find the fresh ones. I think both of these options are so much easier than cutting up a sweet potato since they can be a challenge to cut.
  6. While the potatoes are cooking, break 6 eggs into a bowl and beat them with a fork to scramble them. You can opt to add milk here. 
  7. Put a pan on medium to medium high heat and put your eggs in the pan. I chose to not move the eggs around a ton while cooking so I could control the size of the egg pieces at the end of the cook process. These will take about 5 minutes to cook depending on your stove/pan.
  8. Remove the sweet potatoes from the microwave and place in a bowl and place the eggs in another bowl. Place both in the fridge for a few minutes to cool.
  9. Once everything is done and you are able to touch the meatballs, cut up everything into bite sized pieces. I cut the meatballs into 4-6 pieces. The meatballs will let off a bit of liquid when they cool due to the water content of the veggies.
  10. Once everything is cut, assemble the containers using whatever containers you have that are freezer friendly. Place meatballs on the bottom then sweet potatoes and then the eggs.

I was able to spend about $8.50 to make 12 healthy breakfasts in about 40 minutes.

 

Super easy to make! I usually add a few other fruits and small things to his breakfasts but all the prep work is done with this meal prep.

I was able to fill 12 containers for easy baby led weaning friendly breakfasts! I love knowing exactly what is in his breakfast and the convenience of making it in batches.
