Easy Family Dinner-Copycat Costco Chicken Bakes

Ingredients

  • Premade Pizza Dough (I made my own but you can buy the premade store kind)
  • 1 Cup Mozzarella Cheese
  • 1/2 Cup Parmesan Cheese
  • 1/3 Cup Caesar Dressing
  • 1/2 lb Bacon (Lazy hack: Use Costco Bacon Bits)
  • 1 lb Chicken (I used precooked chicken strips)
  • Chives (I used freeze dried)
  • Garlic powder, salt & pepper to taste
  • 1 tbsp melted butter or spray oil

How to

  1. Turn on the oven to 400 degrees.
  2. Roll out your pizza dough and separate into 2-3 servings. I used homemade pizza dough so I was able to get 3 chicken bakes but if you are using the pizza dough out of a can, you’ll probably only get 2 per can.
  3. Cook bacon in frying pan or oven. I prefer to use the oven for this recipe and cook them for about 20 minutes at 350 degrees.
  4. Cook the chicken per bag instructions and sprinkle with salt, pepper and garlic to taste.
  5. Once chicken and bacon are cooked and cool to the touch, cut the chicken into bite sized pieces and cut the bacon into small strips.
  6. Pour Caesar dressing onto each pizza surface while leaving about 1/2-1 inch around all corners.
  7. Sprinkle mozzarella on half of each chicken bake and place chicken, bacon and chives. Only putting the toppings on one side makes it much easier to fold.
  8. Add extra mozzarella and a heavy sprinkle of parmesan.
  9. Fold the calzone in half and roll the edges so that they are sealed. Press with fork around the edges to seal. Spray or brush with butter/oil and sprinkle garlic and parmesan over the top.
  10. Cook for 25 minutes at 400. If needed, broil for a few minutes at the end to get extra color.

The recipe is so cheap and fun for the whole family.
