Ingredients
  

  • 2/3 16 oz bag Sweet Potato Cubes Steamable in Bag is Easiest
  • 4 Eggs I opted for cage free.
  • 2 Sausages I opted for natural chicken & apple sausages.

Instructions
 

  • Stab the bag of sweet potatoes with a fork a few times and throw them in the microwave per the instructions on the bag.
  • While the potatoes are cooking, break 4 eggs into a bowl and beat them with a fork to scramble them. You can opt to add milk here.
  • Put a pan on medium to medium high heat and put your eggs in the pan. If you want to control the size of the pieces, don't move the eggs around a ton until the end of the cook.
  • Remove the sweet potatoes from the microwave and place in a bowl and place the eggs in another bowl. Place both in the fridge for a few minutes to cool.
  • While the eggs and potatoes cool, cut up two sausages into bite sized pieces.
  • Once everything is cut, assemble the containers using whatever containers you have that are freezer friendly. Place sausage on the bottom then sweet potatoes and then the eggs.

Notes

These last about 3 days in the fridge and up to a month in the freezer!
