Copycat Nurture Life Roasted Chicken with Broccoli & Potato Medley

Equipment

  • 1-2 Medium Pot You can choose to wait for one veggie to cook and opt for using the same pot.

Ingredients
  

  • 6 oz Broccoli Florets I recommend steam in bag organic.
  • 1-2 Organic Gold Potatoes 1 medium or 2 small
  • 5 oz Sweet Potato Cubes Recommend steamable in bag and organic, if you can find them
  • 7 oz Tyson Grilled Chicken Strips About 7 big strips are 7oz
  • If Desired Thyme and Garlic

Instructions
 

  • Pierce the bag of sweet potatoes with a fork and place in microwave using the instructions on the bag
  • While the sweet potatoes cook, take out two small or one medium sized potato and dice it into finger bite sized pieces. 
    Once the sweet potatoes are cooked, put them in a bowl and place in the fridge to cool.
  • In a medium pot, fill it about halfway with water and place your potatoes in the water on high heat. Let the potatoes cook in boiling water. This took about 20 minutes for me. You want to check on them every 5 minutes until they are tender enough to put a fork through them.
  • Once potatoes are tender, strain them and let them cool down.
  • Place the broccoli in a medium pot and put about 2 cups of water over the top. Cook on medium high heat and cover the broccoli. This will cook around 10 minutes. Check to see if soft every 5 minutes. When the broccoli is done, put in a bowl and put in the fridge.
  • Cook the chicken on a plate according to the instructions on the bag. Place in the fridge to cool once done.
  • Once the chicken is cool to the touch, cut into small finger sized pieces.
  • Grab whatever freezer friendly containers you have. Place the chicken on the bottom. Mix in some sweet potatoes and some gold potatoes then top with broccoli. Add about an ounce of each ingredient.
  • Sprinkle with thyme and garlic as desired

Notes

These last about 3 days in the fridge and about a month in the freezer. 
 
I usually take them out of the freezer the night before I am going to use them and they microwave in about 20 seconds.
