Ingredients
  

  • 1 Bag Sweet Potato Cubes
  • 6 Large Eggs
  • 1 Handful Baby Carrots
  • 1 Handful Spinach
  • 1 Lb Ground Turkey
  • 1 Splash Milk If desired

Instructions
 

  • Preheat oven to 350.
  • In a small food processor, put a few carrots and some spinach in it and pulse until diced finely.
  • Put the ground turkey in a bowl and add the veggies. Mix until well blended.
  • Mold the mixture into small balls. I did about the size of ping pong balls. Place in oven for about 20 minutes or until the internal temperature is over 165.
  • While the meatballs are cooking, stab the bag of sweet potatoes with a fork a few times and throw them in the microwave per the instructions on the bag.
  • While the potatoes are cooking, break 6 eggs into a bowl and beat them with a fork to scramble them. You can opt to add milk here. 
  • Put a pan on medium to medium high heat and put your eggs in the pan.
  • Remove the sweet potatoes from the microwave and place in a bowl and place the eggs in another bowl. Place both in the fridge for a few minutes to cool.
  • Once everything is done and you are able to touch the meatballs, cut up everything into bite sized pieces. I cut the meatballs into 4-6 pieces. The meatballs will let off a bit of liquid when they cool due to the water content of the veggies.
  • Once everything is cut, assemble the containers using whatever containers you have that are freezer friendly. Place meatballs on the bottom then sweet potatoes and then the eggs.
  • Microwave from thawed for about 12 seconds. Microwave from frozen about 30-40 seconds.
