Ingredients
1BagSweet Potato Cubes
6LargeEggs
1HandfulBaby Carrots
1HandfulSpinach
1Lb Ground Turkey
1SplashMilkIf desired
Instructions
Preheat oven to 350.
In a small food processor, put a few carrots and some spinach in it and pulse until diced finely.
Put the ground turkey in a bowl and add the veggies. Mix until well blended.
Mold the mixture into small balls. I did about the size of ping pong balls. Place in oven for about 20 minutes or until the internal temperature is over 165.
While the meatballs are cooking, stab the bag of sweet potatoes with a fork a few times and throw them in the microwave per the instructions on the bag.
While the potatoes are cooking, break 6 eggs into a bowl and beat them with a fork to scramble them. You can opt to add milk here.
Put a pan on medium to medium high heat and put your eggs in the pan.
Remove the sweet potatoes from the microwave and place in a bowl and place the eggs in another bowl. Place both in the fridge for a few minutes to cool.
Once everything is done and you are able to touch the meatballs, cut up everything into bite sized pieces. I cut the meatballs into 4-6 pieces. The meatballs will let off a bit of liquid when they cool due to the water content of the veggies.
Once everything is cut, assemble the containers using whatever containers you have that are freezer friendly. Place meatballs on the bottom then sweet potatoes and then the eggs.
Microwave from thawed for about 12 seconds. Microwave from frozen about 30-40 seconds.
